Cream Top Milk
What is Cream Top Milk? We get that question a lot. Basically Cream Top Milk is milk that has not been homogenized, so the cream floats to the top!
Our milk contains high butterfat! Butterfat from grass-fed cows is rich in short-and-medium chain fatty acids which protect against disease and stimulate the immune system. It contains conjugated linoleic acid which has strong anticancer properties. ( Source - Weston A Price.org).
Our milk is vat pasteurized, never homogenized. This means we perform a lower temp gentle pasteurization that requires much more time to complete than the newer modern flash pasteurization but preserves the integrity, flavor, and nutritional content of our milk. We stir it gently so as not to disturb the precious fat molecules, heat it slowly, and then cool it rapidly.
Our chocolate milk is a simple recipe... our cream top milk, cane sugar, natural cocoa, and vanilla extract. You have to give it a good shake.... there are no stabilizers so the cocoa sinks to the bottom while the cream rises to the top! Super rich..it tastes almost like melted ice cream!
